It is said that for success, one must know how to dream. And to fulfill the dream requires constant hard work and perseverance. Only those who follow their dreams and are committed to action can turn their dreams into reality. One of them is Narayan Shrestha from Dhading.
Born in Maidi, Dhading, Narayan completed his studies up to SLC. He studied in Shree Pipaltar Primary School of the village till Class 5 and later passed his SLC from Shree Ratneshwar High School in Gorkha Darbung. Then he entered the capital Kathmandu for further studies in 2067. To break the story, since classes 11 and 12 have already started in the school, the teachers did not say that they would have taught them there. But in his heart, the desire for the city had awakened. I didn't know anything. But after going to a big place, it was also about getting an opportunity,' Narayan remembered what happened at that time.
By the time he arrived in Kathmandu, he could not get any idea of what to study and where to study. Narayan stayed with his uncle's sons in Kathmandu. He was accompanied by Anil Dai, Keshav Dai and Sushma Didi. Then, on the advice of his brothers, he joined Sigma College in Sohrakhute to study management.
He also started working part-time for some time to meet his expenses. Study in afternoon, helper in guest house in evening. Some friends studied hotel management. He used to talk about the times when he visited the hotel. Narayan used to listen very carefully. But sometimes it was as if a cold entered my heart - for not studying hotel management. Narayan began to see a future in this field only after a short experience working at
hotel. But he felt that being a helper is useless, everything is in the safe. Narayan completed his 12th standard education by understanding the struggle and bustle of the urban world.
When he was studying for his graduation, he found out that the new hotel Hilton, which is about to open in Dubai, United Arab Emirates, had advertised in Nepal asking for employees. Even though he got to work as a helper in Dubai, he felt that he learned something. Then Narayan who applied was selected.
Kaka's sons also work in the hotel line in Dubai, so he decided to go there. When he arrived in Dubai a decade ago, the hotel where he worked had not yet officially opened. Being a new hotel, a lot of work had to be done. The pastry chef of the
hotel was Nepali. For Narayan, this became an opportunity. When he used to go to the market for work and eat the donuts, biscuits, and cakes brought by his parents, Narayan thought - could he make the same?'
In the tune of finding the same taste of childhood, he started learning pastry work in his spare time after finishing his work. "After that, I thought that something could be done in this area," he said.
After working as a helper for about 6 months, Narayan asked to be transferred to the kitchen. But because of lack of experience, they did not get it. After some time, Narayan got an offer from 'Four Seasons Hotel' in Doha, Qatar. He was ready to go to Doha, hoping that the salary would be higher and he would get a job in the kitchen after going there.
In 'Four Seasons', there were only about 15 people making pastries. A variety of pastries and cakes were made in the hotel. After working for some time, he felt - 'Whatever was done in life was done right. Now I thought that my dream of becoming a pastry chef will come true.' After working as a helper at
Four Seasons for about 6 months, he was transferred to the kitchen. Indrakazi Rai, the pastry chef and Bishnu Sunar, the bakery chef, were both Nepalese. It was like searching for Narayan. While working, he became so interested in pastry that even though the hotel job was for 8 hours, he was busy for 15/16 hours learning the job. "Especially, it was Mehenet who taught me the art of pastry," says Narayan. While learning to work as a helper at
pastry, he also got the opportunity to take training from the company. When Narayan completed his training, one of the safes left the job and Narayan got an opportunity. Narayan says, "Some of the safes said that it is not because it is new. But because many believed, I got the opportunity.'
After finishing the pastry work, he would also help in the bakery. Thanks to Bakery Chef Vishnu, Narayan learned to make many bakery dishes. Narayan, who is very diligent in his work, was hoping to get a promotion in 2018.
But he was disappointed when he was not included in the promotion list as expected. At the same time, he found out that the application for safe was opened at the Abu Dhabi (UAE) branch of the Four Seasons Hotel. Narayan also applied. After that, Narayan worked in Abu Dhabi for about five years.
In 2023, after receiving an offer from the UK, he is working at the 'Intercontinental London' hotel in Otu. During this period, he has become a junior shoe-safe. From the same hotel, Narayan got the opportunity to participate in the world's prestigious and competitive baking competition 'Bake of the Professionals-2024'.
Narayan is the winner of 'Bake of The Professionals-2024' held last July. He and India's Tanju Sharma's team won the title in the final of the tournament, defeating the Royal Air Force Club's competitors.
Narayan became the winner of the competition by showing his extraordinary skills and competence in technical fields like sugar, chocolate, chow pastry and pate sucre. "Becoming a Bake Off winner is an extraordinary achievement for anyone. Moreover, this is a matter of pride for Nepal,' says Narayan. He says that after winning the title, he is more motivated to do something new.
Lately, Narayan has been active in creating new dishes related to chocolate. In addition to that, he is also preparing to promote Nepali materials globally. He says, 'I am thinking of using jaggery and Nepalese food in the ingredients I make. The idea is to make Nepal's cooking world-class and provide it to the global market.'
Apart from that, Narayan also has the idea of teaching his skills to others. He says, "I want to spread the skill of going to Nepal as well." The idea is to mix Nepalese flavor in the cake and use sugar instead of sugar to make it Nepali.
