Surajan Shrestha is a well-known animal rights activist from Chitwan. Kalyanpunj Shrestha is Surajan's best friend who has been active for the rights and welfare of wild animals and other domesticated animals for 12 years. By kinship, Surajan's maternal uncle's son, Kalyan, is a foodie. But they are aware that what they eat should not damage their health. Environmental graduate Sudha Timalsena is also a campaigner.

These three youths between the ages of 26 and 29 have been running a new cafe in Bharatpur since last June. All three do not eat fish meat and eggs at all. They do not eat not only fish and meat, but also milk, curd, ghee and honey produced by animals. All three people have adopted a higher 'vegan' lifestyle than 'vegetarian'. Their diet consists only of grains and plants.

'Seitan' looks like a piece of meat. Meat eaters can also be swayed by a bite of seitan. Some people think that 'Buff Choila' is not eaten. 'Seitan Chilli' forgets Chicken Chilli. The specialty of Surajan, Kalyan and Sudha's 'Vegan Paradise Cafe' is the seitan snack items. The menu of this cafe in Bharatpur has 82 types of dishes in 6 categories. Sudha is a 26-year-old graduate in environmental science. She is from Bharatpur-11. Although the place and subject of study and age are different, all three of them are connected by human health, animal welfare and environmental protection. 

At some point all three eat meat out of interest or compulsion. But gradually they became vegetarians and became pure vegetarians. In our house, my mother was a vegetarian. But he fed us fish. He did it for nourishment. In 2006, when I was studying in class 8, I saw a cut of khasi,'' said Sudha.

His uncle's son, Kalyan, used to eat foods that would not harm a person's health, so he thought vegan was best. In this way, the three 'Vegans' also stayed together in the campaign at times. But when going somewhere to have lunch, there was a widespread custom of giving food mixed with milk, curd, and ghee without understanding what 'vegan' means.

'And we are the only ones in this campaign, so we thought why not run a vegan cafe,' said Sudha. Three people started the cafe from last June by raising four lakh rupees each. Vigan campaign has been launched in Kathmandu and some other cities. Cafes and restaurants have started running happily. But the vegan cafe is the first of these three tours in Chitwan. Now some have opened in Sauraha too.

It took time to buy prepared goods from the shopping mall, which is expensive, to make it yourself,' said Sudha. They use coconut and soybean for milk. Seitan, which looks like meat, is prepared from a combination of wheat flour and legume flour. They add beetroot to it for colour.

We have to prepare these materials and submit them to Safe. In the beginning, it was difficult to maintain the safe as we could not give,'' said Sudha. Since Vigan Paradise Cafe opened, two safes have left. Now the third safe is working. But Surajan says there is no problem now as they are able to prepare the ingredients needed for the dishes.
