Internationally renowned chef Santosh Shah has introduced new flavors to Biratnagar through 'Mithila Thali' and 'Janakpur Fish House'.
Shah, who made an international name for himself through the famous British cooking reality show 'MasterChef: The Professional', has launched a new outlet in front of the DDC building in Biratnagar.
He has interpreted this outlet, which houses Mithila dishes, Janakpur flavors and Mithila art under one roof, as not just a restaurant but a 'culture of flavors' exchange.
According to Shah, the 'Mithila Thali' brand was launched with the aim of expanding Mithila culture, cuisine and traditional flavors to major cities in the country. This is the fifth outlet to be opened in Biratnagar. The main attraction of the
restaurant is the ‘Mithila Thali’, which includes original dishes of the Mithila region including taruwa, tilauri, biriya, kadibadi, chokha, ghee roti, and bhaat. Similarly, ‘Janakpur Fish House’ offers dishes ranging from tawa fried trout, local shrimp, crispy fried prawns to special tawa fish set. Arrangements have been made to serve Janakpur style sadeko khatte, radish pickle, satu, lassi, and paan with the dishes. Another feature of the 
outlet is its decoration. The entire interior is based on Mithila art. From the entrance to the walls, it is decorated with Mithila paintings, and artworks by local artists are on display. Shah said that since customers can purchase these works, the artists will receive direct financial support.
The management has stated that the capacity is for about a hundred people in the initial phase and there is a plan to increase it to two and a half hundred people after expansion. A hall has also been built for seminars, conferences and various programs.
Shah has described Biratnagar as a city with the potential to become a 'restaurant hub' in the coming days. According to him, five-star hotels, international chains and new food projects are expanding here, which has also increased the potential for food tourism.
In recent years, Shah has been holding pop-up shows of Nepali traditional dishes in America, Europe, Australia, New Zealand and Japan. Sharing his experience of the increasing demand for Nepali original flavors on the international stage, he said that he has prioritized expanding the 'Mithila Thali' brand in the country.
