Dahi-Mahi: Taste, Health and Culture

Among the five elixirs, curd is considered one of the 'amruts'. Asar 15 is a special day for farmers to eat curd. According to Hindu tradition, if you have to go to an auspicious event, it is customary to feed curd. It is a custom to mash rice and yogurt on Dasai. Dahi is considered an integral part of Nepali Hindu culture.

In South India also special curd dishes are eaten at the end of the meal. In Nepal, there is no one who does not know about the taste of 'Juju Dhau' of Bhaktapur.

Now in various radios, newspapers, TV, it is being promoted that eating ``Lacto Bacilai'' to cure the stomach and eating Jhol food put in the basket by the artist is good. But to settle the stomach, it is best to consume curd-mohi because it contains 'lactobacilli'.

After getting older, some people may have upset stomach after drinking milk, but they do not have any problem if they eat curd, mohi made from milk. Because curd is easily digested by those who cannot digest lactose in milk.

Various scientific studies have shown that yogurt increases the good bacteria in the gut. Yogurt increases the body's ability to fight disease. After taking antibiotics, some people are advised to eat yogurt and mohi when their stomach is upset.

The calcium in yogurt keeps bones strong, so it is especially important for children, the elderly, and postmenopausal women.

Vitamin 'B12' in curd benefits health. With the summer season, fruit juices, cold drinks etc. are used a lot. Parents feel happy to give their young children such juices and cold drinks. But such a drink causes damage to the liver, stomach, heart, brain of the child, the children are ill for life

but upsurge! In today's commercials, many artists advertise such Batta juice, cold drinks. And everyone thinks it's okay. The Ministry of Health, which works in the "public health" of the government, does not pay attention to such false advertisements and non-communicable diseases increase.

Paneer, Sikni etc. made from curd give both taste and health. Yogurt and Mohi are very beneficial for people suffering from constipation. While fasting, eating curd and mohi also adds water to the body, many micro nutrients are also found.

Yogurt is made by dissolving it in water. It is also called 'Chhacha' or 'Goras' towards Madhesh. Dahi Mather Nauni comes out, ghee is made from it. All these items are beneficial for health. In the heat of Terai, honey also fills up the lack of water in the body. Earlier, farmers used to take 'buttermilk' when they went to work in the fields because it was known that 'buttermilk reduces their thirst and fatigue while working'. Abscess, nowadays, farmers drink not mohi, but drink 'cold drink' and damage their bones and brain.

Earlier, grandmothers used to feed children with curd and rice. Because of this, the children's stomachs would be fine. Grandma didn't have scientific knowledge about curd and mohi, but she knew it was good. Earlier it was customary to feed curd and mashed banana when constipated. It is said that curd and banana will improve the health of malnourished people, it will also help to recover from illness. That is why guests were welcomed by making curd and mohi in the village. Curd, mohi helps in digestion. That is why curd and radish are kept in Newar community feast. Nowadays, it is customary to keep sweets and curd even in modern 'buffet' feasts. If the curd is washed, the guests will eat it as it is more delicious. It would be great if everyone understood and practiced the use of curd and mohi because such a tradition has both scientific and cultural importance.

I sometimes face various accusations. "Other than you, no other health professional says that such advertisements are wrong and that such drinks are harmful. Are you the only person who has learned something that no one knows?' At that time I keep quiet. And how many people say - 'What do you eat when you are thirsty in the summer?'

My suggestion to such people is - 'Mohi, lemon water, etc. are also available, right! In order not to lose water in the body during summer, if you drink honey with salt and black pepper, both taste and health are good.'

Cold drinks are expensive and harmful to health, guava is cheap and healthy. Giving honey or buttermilk to children is good for money management and good for health. A variety of cold, sugary drinks or canned fruit juices make children fat and weaken their bones, depleting them of various micronutrients. Whereas, curd-honey makes children healthy, gives strength to fight diseases and keeps the stomach healthy.

Butta juice contains more than 70 percent sugar, a chemical named after the fruit. Therefore, the juice kept in this bottle does not spoil for many days, but the health of the child deteriorates if it is consumed. So let's eat curd, one of the five nectars. Let's eat mohi. The use of 'cold' drinks increases the chances of children getting diabetes at an early age, many scientific researches have confirmed this.

Not only for drinking, many kinds of dishes can be made by kneading curd-honey. In the Far West, 'Nisausya' is a special dish made by kneading rice flour in curd. It is delicious, even if you take it on a long trip, it does not spoil quickly.

Similarly, 'Kadhi' cooked with sour honey and gram flour is also very popular in the Terai region of India and Nepal. During summers curd and banta or cucumber raita gives both coolness and taste. Palpa's special curd and mashed potatoes can be eaten with rice, chiura, roti.

Sikarni made by extracting curd water and adding cinnamon, honey, sugar or sugar according to taste and cashews and raisins becomes a special dish. The taste of Srikhand, a special type of curd made in West Bengal by adding saffron to curd, is unforgettable once eaten.

Russians add curd to a special soup made with cabbage and beets. This is called 'Smitana'. It is famous throughout Europe. Yogurt is not only for eating, it is also used for skin and hair health.

It is an old custom of cleansing the face by mixing curd, gram flour and turmeric. It is also customary to wash hair with sour curd and mustard oil on tea-stained hair. If the skin is burnt by sunlight, it is customary to cool it by applying curd. Even grandmothers used to give advice to apply curd, honey, lemon on the face, now people working in different parlors give the same advice.  There are also some people who say that milk and curd should not be used for

. What they argue is that they do not eat fish, meat, honey, milk and milk products. It harms the body. Such people are called 'Vegan'. People who agree with their logic do not consume milk and curd. But since various scientific researches have shown that curd is suitable for health, shouldn't one of the 5 elixirs be used, curd, mohi?
