After becoming BBC Master Safe in 2021, Santosh Shah's journey that started from London is now spreading all over the world. With the aim of spreading the identity of Nepali food around the world, he has been invited to visit different countries.

After winning the BBC Master Safe, he was applauded all over the world . The millet kheer he made in the competition became more and more popular. Many wanted to taste the food he made. Aiming at that, his special program was organized in London for four months. This was his first 'pop-up'.

'After I became a BBC Master Chef, many people started searching, I was working in an Indian restaurant at that time, there were no Nepali dishes on the menu of the restaurant, so the program was organized in London,' said Saif Shah . His demand was such that ticket sales for the program were sold out within two hours of opening.

The pop-up was organized for various dates. An average of only 20 to 22 people participated in a program . The 600 tickets kept for the program that will run for four months were sold out in a matter of minutes. After the

London event, an invitation came from Scotland for a pop-up in the same year . In Scotland, the Nepali community organized a special event at a Nepali restaurant. Saif Shah honed his culinary skills there too.

Shortly after that, a special event was held in London for the four winners of Master Safe. An eight-course menu was made with two courses each. His talk became even more popular with his continuous programs. The demand for pop-up programs started coming from different countries . Sah felt, this can be a suitable way to spread Nepali food all over the world .

After that, Sah planned to continue traveling the world without limiting his culinary skills to just one hotel or restaurant. At that time, he thought of starting a restaurant in Nepal under the name of Mithila Thali and doing business here, but he did not think that the program of promoting Nepali food should be continued all over the world. held pop-up events in Germany and Switzerland in 2022. Pop-ups were organized in 14 places in America for the first time. In which all the tickets were sold out at the beginning . In this regard, Sah completed pop-up programs in four cities in Australia and five cities in New Zealand. Now pop-up programs are being made in Canada and Japan in his schedule .

Saha is going to America next July . Then he is scheduled to go to Germany . Sah, who started his world tour by cooking Nepali food, continues to organize pop-ups on a private level in Nepal as well. Some time ago, a special pop-up was organized at Mithila Thali for the marriage anniversary of Nepal's only dollar billionaire Vinod Chaudhary and another one for Chaudhary's guests. "As long as time passes, I will be organizing pop-up events in Nepal as well, some programs have been organized for various organizations and individuals," Seif Shah said.

He has also popped up for charity. The money collected from the charity pop-up held among foreigners in Switzerland was brought to Nepal and spent for those who cannot speak and hear. Hospitality-related training was given to disabled people who cannot speak and hear in Pokhara with this amount. Apart from that, a pop-up was organized at Annapurna Hotel in collaboration with Gate College and PATA for the construction of the canteen of Beltar Hospital in Udaipur. In which there were more than 200 people . The amount collected from that was spent on the construction of the canteen of the hospital.

According to Sah, during his world travels, the menu also changes according to the needs of the place. One of the most common comments he gets during his travels is his style of cooking Nepali food.

Saha's juju dhow (yogurt) dish is loved by many. Juju Dhauma with smoky flavor, Himalayan honey, guaran flower boiling water, jam and jerry crumbled baked jujudhu is a favorite dish of most people . Besides, hemp leaf dumplings are also liked by many. Bhang leaf dumplings are mixed with chillies and chaat masala .  Sah is still fresh in the memory of the people who ate the millet kheer he made during his world tour and praised him with open voice. He makes a menu of 10 to 17 courses in most places . They serve Newari, Madhesi and other food with a modern flavor.
